In earlier times the bakers of Coventry created a cake called a ‘God Cake’. This cake was traditionally made at Easter time and was given to godparents from their godchildren. Like most things the idea came from economic reasons, the bakers needed to use up any left-over mincemeat from Christmas before the hot summer weather set in. The God Cake is a triangular pastry filled with mincemeat. The triangular shape is difficult to bake and needs great care and manipulation to ensure the correct method is followed precisely. This ensures an even bake and the filling does not run out of the pastry during baking. The three points of the cake represent the Holy Trinity. For those not of a religious faith, the points represent the three spires of Coventry.
